Sausage & Vegetable Medley

Sausage & Vegetable Medley

Around my house this dish is a quick, easy and nutritious food staple! Typically I like to cook about every night during the week, but with work keeping me extra busy, I decided to make a little extra to last us 4 meals. Wow, right? To some, this may seem typical, and to some this may sound so unconventional. For me, I prefer to cook fresh meals every evening as much as I can, and when you enjoy cooking like I do, you somehow always find the time (or excuse).

We love this dish because it’s light (it’s loaded with veggies) but filling enough to keep you satisfied. I cannot promise you that you won’t go back for seconds, it is that good! I topped mine with a balsamic glaze, La Crema Pedroni directly imported from Italy, for a more balanced taste. You can also go for a more readily available one at your nearest grocery store. If you shop at Trader Joe’s, they have a pretty good one there too. The pork sausage links I purchased from Costco simply because they are delicious and I like the amount of sausages per bag. I hope you enjoy preparing this dish as much as eating it! Have you tried cooking to good music? I love to do that 🙂
